Apple Oatmeal Muffins

 

As a mom of 3 young children I’m always on the look out for foods that my children enjoy and are good for them.  I can’t take credit for this recipe as it comes from my children’s Oma’s kitchen. I asked Oma for her recipe but she only has it written down and doesn’t have the original site. Whenever my kids go there she has some freshly baked muffins waiting for them and they gobble them down immediately.  We now bake them at our house all the time and it makes for yummy snacks and great family bonding.
Here is the recipe:
 
Apple Oatmeal Muffins 
 
1 1/14 cup Whole Wheat Flour
1 cup oatmeal (instant)
1/4 teaspoon of salt
2 teaspoons of baking powder
1/2 – 1 teaspoon of cinnamon
1/2 cup of skim milk
1/4 cup of oil
1/3 cup of honey
2 cups of shredded apples ( medium sized apple)
Bake for 18-20 minutes depending on your oven ( you know your oven the best)
Should give you 12 muffins
We use paper liners in our muffin tins and sometimes find that when the kids can’t wait for the muffins to cool down a lot of muffin comes off with the paper so for best results wait for muffins to cool completely before eating.
